GRILLED SNAPPER
WITH MANGO SALSA
For Red Snapper
- 4 (8 oz.) Red Snapper Fillets
- 2 Limes (juiced)
- 1 TSP Minced Fresh Ginger
- 1 TSP Course Ground Black Pepper
- 3 TBS Extra Virgin Olive Oil (EVOO)
For Salsa
- 2 Mangoes (diced)
- 2 Cups Pineapple (diced)
- ½ Cup Green Onion / Scallion (minced)
- 2-3 Chile Chipotles in Adobos (for more heat add 1 serrano chili)
- ½ Cup Cilantro (chopped)
- 2 TBS agave or dark brown sugar (to taste)
- ½ TSP salt (to taste)
- 1 TSP Pure Vanilla Extract
Instructions
Preheat a grill (or pan). Place Red Snapper Fillets in a shallow dish. In a small bowl combine lime juice, ginger, pepper, and olive oil. Pour the mixture over the fish and let sit for 15 minutes.
While Fish is marinating, in a Medium sized bowl combine fruits with green onion. Remove seeds and veins from chipotles and mince and add to fruit mixture. Add Agave or brown sugar and chopped cilantro as well. Add salt and lime juice. Taste and adjust seasonings as desired.
Grill the Fish over medium heat until flesh is cooked through and opaque (about 4 minutes per side). Top with Tropical Fruit Salsa and serve.
This dish is a great way to get a good lean protein and Omega 3’s without carbohydrates. You will also fulfill your sweet craving without much added sugar. Kids will love it too! Snapper is a nice mild fish. For some added heartiness add toasted some organic corn tortillas and have delicious fish tacos!
