Salmon Quinoa Burgers ๐ ๐ ๐ฑ
In my house, every Monday is: Burger Monday!

BURGERS:ย
1lb.ย Salmon (chopped or food processed)
About 1 1/2 cuppish cooked Quinoa (cooked in rice cooker with 2:1 water:quinoa ratio)
1/2 chopped yellow onion
4-5 chopped garlic cloves
2-3 stalks chopped scallions
1-2 whole eggs
S + P
Sautรฉ your onion + garlic. Add salmon. Add quinoa. Let cool. Add 1 egg. Is it too dry? Add another. Form in to patties and throw those babies on the burner until golden brown + slightly crispy.ย We prefer cast iron.
DRESSING:
1/4 c plain Greek/European Yogurt
Chopped Chives
Trader Joeโs โEveryday seasoningโ
*optional: add Honey to desired sweetness
Mix together + dollop on that bad boy of a salmon patty.
SALAD:
I left the measurements for the salad open. Adjust to the amount of people you will be preparing for.
Baby kale + spinach ๐ฑ
Cucumbers
Avocado
Sunflower Seeds ๐ป
Hemp Seeds
Toss your greens with dressing. Add cucumber. Add nuts + seeds. Garnish with avo. Enjoy!!
SALAD DRESSING:
Olive Oil (about 1/4 C)
Mustard (about 1-2 TBS)
Honey (enough to desired sweetness)
Pepper (your call)
